  • 50 g of pecorino cheese
  • 50 g of parmesan  
  • 3 large eggs
  • 350 g of spaghetti
  • 2 big garlic cloves; that have been peeled and left as whole
  • 50 g of unsalted butter
  • A pinch of salt and fresh ground black pepper

Instructions

  1. Put a large pot or saucepan filled with water on the stove to boil.
  2. Take the pancetta or bacon and remove any unnecessary skin, extra fat, or rind; then chop it off. Then finely grate the pecorino cheese and parmesan, and mix them.
  3. Take 3 large eggs in a bowl, beat them, and put some fresh ground black pepper on it, according to your taste. Set everything aside.
  4. Add 1 teaspoon of salt into the boiling water, put the spaghetti, and let it boil again. When the water comes to a boil, cook it at a constant simmer; cover for about 10 minutes or until it gets properly cooked.
  5. Squash the 2 peeled garlic cloves with the knife.
  6. While the spaghetti is cooking, put 50 g of unsalted butter in a frying pan, and when it melts, put the meat and garlic in the pan and fry them.
  7. Leave it to cook for approx. 5 minutes at medium heat, frequently stirring it. At this point, garlic has imparted its color so remove it with the help of a spoon.
  8. Now keep the heat under the pancetta low; when the spaghetti gets ready, pick it up with the help of a fork or a big spoon and pour it into the frying pan to be cooked with the pancetta. Just don’t throw away the spaghetti water yet.
  9. Mix most of the cheese with the eggs, keeping some for the later stages.
  10. Take the frying pan off the heat and quickly pour in the eggs and cheese mixture. Then using a fork, lift the spaghetti and mix it well but don’t scramble it.
