Instructions

  1. Put a large pot or saucepan filled with water on the stove to boil.
  2. Take the pancetta or bacon and remove any unnecessary skin, extra fat, or rind; then chop it off. Then finely grate the pecorino cheese and parmesan, and mix them.
  3. Take 3 large eggs in a bowl, beat them, and put some fresh ground black pepper on it, according to your taste. Set everything aside.
  4. Add 1 teaspoon of salt into the boiling water, put the spaghetti, and let it boil again. When the water comes to a boil, cook it at a constant simmer; cover for about 10 minutes or until it gets properly cooked.
  5. Squash the 2 peeled garlic cloves with the knife.
