Although the exact origins of spaghetti carbonara are unknown to the world, there are some theories about its possible origins.

  • According to one theory, it was invented by the Italian charcoal workers, known as Carbonari, who prepared the dish on their shovels over the fire.
  • Another one says that the name refers to the ground black pepper in the dish resembling the flecks of coal (as Carbone means charcoal in Italian).
  • Another theory suggests that the spaghetti carbonara was a result of marrying the traditions of American soldiers in Italy during World War II and their bacon and eggs with the local Italian pasta.

However, all of the theories we have ever heard about carbonara suggest that it primarily originated in Italy and then spread worldwide through different means.

The thing that distinguishes carbonara from other spaghetti and pasta is its technique; combining eggs, hard cheese, pork, and black pepper into a smooth sauce is entirely different from the ones we use in other spaghetti dishes.

  • Preparation time: 15 mins
  • Cooking time: 15 mins
  • Total time: 30 mins

Servings: 4

  • 100 g Pancetta or bacon
  • 50 g of pecorino cheese
  • 50 g of parmesan
  • 3 large eggs
  • 350 g of spaghetti
  • 2 big garlic cloves; that have been peeled and left as whole
  • 50 g of unsalted butter
  • A pinch of salt and fresh ground black pepper

  1. Put a large pot or saucepan filled with water on the stove to boil.
  2. Take the pancetta or bacon and remove any unnecessary skin, extra fat, or rind; then chop it off. Then finely grate the pecorino cheese and parmesan, and mix them.
  3. Take 3 large eggs in a bowl, beat them, and put some fresh ground black pepper on it, according to your taste. Set everything aside.
  4. Add 1 teaspoon of salt into the boiling water, put the spaghetti, and let it boil again. When the water comes to a boil, cook it at a constant simmer; cover for about 10 minutes or until it gets properly cooked.
  5. Squash the 2 peeled garlic cloves with the knife.
  6. While the spaghetti is cooking, put 50 g of unsalted butter in a frying pan, and when it melts, put the meat and garlic in the pan and fry them.
  7. Leave it to cook for approx. 5 minutes at medium heat, frequently stirring it. At this point, garlic has imparted its color so remove it with the help of a spoon.
  8. Now keep the heat under the pancetta low; when the spaghetti gets ready, pick it up with the help of a fork or a big spoon and pour it into the frying pan to be cooked with the pancetta. Just don’t throw away the spaghetti water yet.
  9. Mix most of the cheese with the eggs, keeping some for the later stages.
  10. Take the frying pan off the heat and quickly pour in the eggs and cheese mixture. Then using a fork, lift the spaghetti and mix it well but don’t scramble it.
  11. Add the spaghetti water (a few tablespoons will do the work), which we haven’t thrown away yet, to keep it saucy, as you don’t want it to become wet. Sprinkle some salt if needed.
  12. Now take out the spaghetti into a large bowl and serve it hot. You can serve it with a little garnishing of cheese and black pepper in the end, and if it gets dry, then just splash a little amount of water to bring out the moistness of the dish.
